Wild duck with berry sauce

  1. Chop the shallots, fresh ginger, garlic and walnut kernels. In a small saucepan, heat the oil over medium heat. Add chopped vegetables and cook, stirring occasionally, for about 3 minutes - until the onions are tender.
  2. Then add cranberries, cherries and apple juice to the sauce, continue to cook, stirring, for another 3-4 minutes. Then add honey, lemon juice, add walnuts and lightly salt. Stir and remove from heat.
  3. Rinse and dry the duck breast. Using a sharp knife, make a mesh-like notch on the skin, but so as not to hurt the meat.
  4. In a separate bowl, combine cinnamon, ginger, chili, salt, add ground black pepper to taste. Rub the duck breast on both sides with the spice mixture.
  5. Heat a heavy, preferably cast iron skillet over medium-high heat. Place the duck breast skin side down, cook for 5-7 minutes, until the skin is well done. Turn over and cook on the other side for another 5 minutes. You have a medium roast duck. When sliced, the core of the meat will appear pink, as will the resulting juice.
  6. Leave the meat to rest for 10 minutes. Cut into slices with a sharp knife, put on a dish and pour over with berry sauce. If the sauce has cooled down by the time the duck is cooked, heat it up a little.
  7. Choose what you love as a side dish. A win-win option would be potatoes - boiled, fried or mashed potatoes.
