Yellow rice with peas

  1. Pound the saffron in a mortar, add 2 tablespoons of water and add this mixture to the rice water.
  2. Bring the unsalted saffron water to a boil, add the rice, stir with a wooden spatula and cook over high heat for 12-15 minutes, until the rice is tender. Empty the rice into a large colander and rinse well under cold water. Let the water drain and set aside.
  3. Boil the peas in salted water for 15-30 minutes, until tender. Melt butter in another saucepan, add rice, salt, stir, heat. Add ready-made peas and serve immediately.
