Zucchini boats with meat filling

If you have zucchini and minced meat in your refrigerator .., I suggest making such a simple and hearty dish

  1. Wash the zucchini, dry and cut lengthwise into two halves.
  2. Remove part of the pulp from each half using a teaspoon, leaving a layer of pulp ~ 8-10 mm.
  3. Grease the zucchini halves inside with olive or vegetable oil, put on a baking sheet, cut down and bake for ~ 10-15 minutes at a temperature of ~ 180 ° C.
  4. Prepare the filling.
  5. Peel the onion and chop finely.
  6. Peel and chop the garlic.
  7. Cut the zucchini pulp into cubes (use a portion of the pulp).
  8. In a frying pan preheated with olive (vegetable) oil, fry the onion and garlic until soft for ~ 4 minutes.
  9. Add zucchini and fry for another ~ 5-7 minutes.
  10. Transfer the onion, garlic and zucchini to a separate bowl (being careful to leave as much oil in the pan as possible) and set aside.
  11. In a frying pan preheated with oil, where onions and zucchini were fried, put the minced meat and fry, kneading with a spoon and stirring, ~ 10 minutes, until tender.
  12. Chop the greens.
  13. Grate cheese on a coarse grater.
  14. Cool the prepared minced meat and mix with fried zucchini, herbs, raw salt and pepper.
  15. Salt the zucchini halves a little, fill with minced meat and spread on a greased baking sheet.
  16. Wash the tomatoes and cut into circles or semicircles.
  17. Spread the tomatoes on the surface of the zucchini, add a little salt and pepper with freshly ground pepper.
  18. Bake in an oven preheated to ~ 180 ° C for ~ 20-25 minutes.
  19. 2 minutes before the zucchini is ready, remove from the oven, sprinkle with small diced mozzarella and return to the oven (instead of mozzarella, you can use grated hard cheese).
  20. Once the cheese is melted, remove the courgettes from the oven, let stand for ~ 5 minutes and serve, sprinkle with chopped herbs.
