Fried potatoes with mushrooms and bell peppers

A familiar dish in a new way - a harmonious combination of fried potatoes with mushrooms and onions, we will add today carrots and aromatic sweet peppers. Fry the potatoes separately, and then combine with the rest of the fried vegetables and mushrooms, season with garlic and herbs, and get a dish that is bright in color and taste. And what a scent!)

  1. Peel the potatoes, rinse and cut into cubes.
  2. Heat 2 tbsp in a frying pan. tablespoons of vegetable oil. We spread the potatoes and fry for 10-12 minutes, until golden brown. Transfer the fried potatoes to a plate.
  3. Peel the onion, rinse and cut into thin half rings.
  4. Peel the carrots, rinse and cut into thin slices.
  5. Add 1 tbsp. To the pan in which the potatoes were fried. a spoonful of vegetable oil, put the onion and fry for 4-5 minutes, until golden brown.
  6. Add the carrots to the onions and fry for 5 minutes over medium heat.
  7. We clean the champignons from dirt, refresh the slices on the legs. Cut the mushrooms into thin slices.
  8. Add mushrooms to fried onions and carrots and fry for 5-6 minutes.
  9. We clean the sweet peppers from the stalk and seeds, rinse and cut into thin strips.
  10. We send the pepper to the pan and fry everything together for another 5 minutes.
  11. Add fried potatoes to fried vegetables and mushrooms, salt and pepper. Stir and fry for 5-7 minutes, until the potatoes are ready.
  12. Chop the washed parsley and green onions.
  13. Pass the peeled garlic through a press and add together with the herbs to the pan. Mix everything and turn off the fire.
  14. Serve hot fried potatoes with mushrooms and sweet peppers as an independent lean dish or as a side dish for meat or fish.
  15. This dish can be prepared all year round using frozen peppers.
