Delicious almond cake "Almondy" is a premium class cake with unique taste qualities. Baked according to a recipe compiled in Sweden at the end of the 19th century, Almondi cakes are made only from carefully selected natural products. Flour free and gluten free. The taste is just incredible!

  1. Add a pinch of salt, vanilla sugar to the yolks, mix well.
  2. We put a saucepan on the stove, add cream, sugar. Stir until sugar melts. You don't need to boil.
  3. Pour the cream into the egg yolks in a small stream, whisking constantly.
  4. Then pour everything back into the saucepan, put on medium heat and stir constantly until the cream thickens. Let cool completely.
  5. Whip room temperature butter and combine with the prepared cream.
  6. Roast the almond flakes.
  7. Add a pinch of salt to the proteins, beat with a whisk until foamy. Add sugar and beat egg whites until peaks form.
  8. Pour the almond crumbs (almond flour) into the meringue and mix gently.
  9. We spread half of the almond meringue in a 24 cm diameter mold. We send it to bake in a preheated oven for 20-25 minutes at 180 ° C.
  10. Then pour the second half of the meringue into a mold, send it to the oven and bake the second cake in the same way.
  11. Let the finished cakes cool completely.
  12. Pour half of the cream on the first cake and spread it well over the surface.
  13. We put the second cake on top, pour the remaining cream. Sprinkle toasted almonds on top.
  14. We send the almond cake to the freezer for 1 hour.
  15. The cake is ready.
