  1. Make Charlotte apple pie dough. Separate the egg whites from the yolks and refrigerate. Leave them in there for at least 15 minutes, because it is the chilled whites that will then be easier to beat into a strong foam.
  2. Beat the yolks with a mixer. Then gradually add 100 g of sugar. Beat until fluffy, creamy and smooth.
  3. Wash the apples and cut them into halves. Core with seeds. If desired, the fruit can be peeled. Cut the pulp into small cubes.
  4. Remove the chilled proteins from the refrigerator and beat with a mixer until they become firm foam. Gradually, without stopping to work with a mixer, add 100 g of sugar. Whisk until hot peaks.
  5. On the sweet yolk mass, sift the flour with ground cinnamon through a fine sieve. Stir quickly until a smooth, not too thick dough is obtained.
  6. Add whites, whipped with sugar. Stir quickly to keep the dough fluffy and not too firm. Heat the oven to 180 degrees.
  7. Grease a mold with a diameter of 20 cm with a little butter. Spread the prepared apple pieces evenly over the bottom.
  8. Pour the dough over the apples, trying to distribute it evenly. Bake without opening the oven door for 20-30 minutes. Charlotte's apple pie should acquire a beautiful golden color.
