Baked potatoes stuffed with feta cheese

Potatoes stuffed with cheese and baked in the oven are an appetizing hot appetizer or a side dish for meat and fish dishes.

  1. Wash the potatoes well and boil over low heat until soft. Drain the water, dry the potatoes with paper towels.
  2. Cut the boiled potatoes in half lengthwise. Use a teaspoon to pick out a portion of the pulp.
  3. Mash feta cheese with a fork with 2 tbsp. tablespoons of grated hard cheese (set aside 1 tablespoon of grated cheese).
  4. Combine the cheese with finely chopped green onions, thyme leaves and pressed garlic. Spice up. You do not need to add salt, since the cheese is quite salty, focus on your taste.
  5. Add potato pulp to the cheese mass.
  6. It is good to knead everything together.
  7. Fill the potato halves with the cheese mass and place the stuffed potatoes in a baking dish.
  8. Put potatoes with cheese in a preheated oven under the grill and bake at 200 degrees for 15 minutes. 2 minutes before the end of baking, sprinkle the stuffed potatoes with the remaining grated cheese.
  9. Serve hot baked potatoes and cheese immediately.
