I love cheesecakes. Despite the fact that they are sweet and high-calorie, they have some kind of lightness, airiness. This somewhat unconventional cheesecake is prepared for the arrival of dear girlfriends in time pressure mode and products from what was in the refrigerator. But it turned out very tasty!

  1. Prepare all ingredients for no-bake banana cheesecake. It is better to take instant gelatin, with it cooking will be even faster.
  2. Grind shortbread cookies with a rolling pin or blender. Pour the melted butter into the crumbs, mix.
  3. Place the crumbled butter in a 19 cm springform pan, tamp down with your fingers, the back of a spoon, or a potato masher, for example. Place the mold in the refrigerator while you prepare the filling.
  4. Pour gelatin with water and leave to swell.
  5. In a blender, grind bananas, yogurt, sugar and cottage cheese. I have a small blender, so I broke the products into two parts and combined them in a bowl.
  6. Heat the gelatin a little in a water bath until the grains are completely dissolved. Combine with stuffing, mix.
  7. Pour the filling into the mold and place the dish in the refrigerator for at least three hours.
  8. After a while, carefully release the banana and cottage cheese cheesecake from the mold, garnish with fresh mint and chopped bananas and berries.
  9. Cut the cheesecake into portions and serve.
