Berry semifreddo cake with warm chocolate sauce

Whipped cream ice cream cake with coffee-nut meringue and berries. Semifreddo berry cake served with warm chocolate cream sauce.

Ingredients

  1. Fry the hazelnuts for 5 minutes in a dry frying pan.
  2. Beat the whites with a mixer until light foam. Add coffee to proteins. Shake thoroughly.
  3. Add sugar. Beat until stable peaks.
  4. Cut the roasted hazelnuts with a knife and add it to the protein mass.
  5. With a silicone spatula, gently mix the whipped mass with nuts from the bottom up.
  6. We spread the meringue with nuts in a refractory form, covered with parchment paper. The layer should be no more than 2 cm high. Put the mold in the oven and cook coffee meringue-meringue with nuts for 3 hours at a temperature of 90 degrees.
  7. After 3 hours, we take out the form from the oven, break the cooled meringue into pieces.
  8. Whip cream into stiff peaks.
  9. Add the meringue pieces to the whipped cream and mix gently.
  10. We cover the detachable form with parchment paper and cling film.
  11. Put a third of the whipped cream with the meringue into the mold.
  12. We put on the cream and distribute half of the washed and dried berries.
  13. We spread another third of the cream with meringue and the remaining berries on top.
  14. Spread the remaining cream with meringue over the berries.
  15. We cover the dessert with cling film, put a plate on top and press it lightly. We put the ice cream cake overnight in the freezer.
  16. Before serving the frozen semifreddo cake, prepare the chocolate sauce. Pour sugar into cream. We put the saucepan on the fire and bring the cream with sugar to a boil.
  17. Grate dark chocolate.
  18. Add chocolate and butter to cream.
  19. Reduce the heat and cook the sauce until the chocolate is completely melted. Pour the sauce into a gravy boat and let it cool slightly.
  20. Serve semifreddo berry cake with warm chocolate sauce.
