  1. Cut the ribs into portions, salt and pepper.
  2. Melt the butter in a thick-walled pan or cauldron. Lay out the ribs.
  3. Fry the ribs in oil over medium heat until tender, turning occasionally (20-25 minutes).
  4. Peel the potatoes. If the tubers are large, cut them into pieces.
  5. Pour potatoes with water and cook. Cook over low heat for 15-20 minutes.
  6. Peel the onions and carrots. Cut the onion into small cubes. Grate carrots or cut into thin strips.
  7. When the meat is done, remove it from the pan. In the same pan in which the meat was fried, fry the onions and carrots. Fry over medium heat, stirring occasionally, for 2-3 minutes.
  8. Drain the water from the pot with boiled potatoes.
  9. Add fried vegetables and meat to boiled potatoes in a saucepan. Pour in hot water or broth. Add salt, pepper and bay leaves. Simmer potatoes with pork ribs for 5-7 minutes.
