Austrian sacher cake - a recipe for true connoisseurs of chocolate cakes.

  1. BASIS: Beat eggs with sugar in a mixer until fluffy foam for about 15 minutes. Sift flour and cocoa. Melt the butter. Gradually add flour with cocoa to the whipped mass and at the same time gently mix with a whisk from the bottom up, immediately after the flour with cocoa, add melted butter and do not stop mixing in the same way, until smooth, but not for long, because you can "plant" the mass. Bake at 180-190 degrees for 40 minutes.
  2. We let it stand and the next day we grease it with impregnation from apricot jam. And on top of the jam, we cover the Austrian sacher cake with ganache (or ganache) - cream and chocolate cream.
