  1. Let's prepare the baking dish. Grease a detachable form with a diameter of 26 centimeters with butter and sprinkle with flour, set aside.
  2. Let's make shortbread dough. Put 200 grams of soft butter, the zest of one lemon into a mixer bowl and, while kneading, add 2 teaspoons of vanilla sugar and 250 grams of granulated sugar, grind until white.
  3. Without stopping rubbing, add four eggs one at a time. In a separate bowl, mix 275 grams of flour with one teaspoon of baking powder. Sift the flour into the egg-butter mixture. Change the attachment of the mixer and quickly knead the soft homogeneous dough.
  4. Put the resulting dough into the prepared form, level it. Leave a small portion of the dough in the bowl.
  5. Add two tablespoons of flour to it, mix and use a pastry bag to make a side. Put the mold in the freezer for one hour.
  6. Let's cook the frangipane. From 150 grams of peeled almonds, using a coffee grinder, we prepare almond flour.
  7. Put 150 grams of soft butter in a bowl, add 1 teaspoon of vanilla sugar, a pinch of salt and 150 grams of sugar, mix.
  8. Continuing to mix, add 3 eggs and prepared almond flour to the bowl.
  9. Add 150 grams of flour, mix well.
  10. An hour has passed. We take out the form with the dough from the freezer, put the prepared frangipane on the dough and bake in a preheated oven at a temperature of 180 degrees for about 1 hour.
  11. While the dough is baking, prepare the apples to decorate the cake. 800 grams of hard red apples cut into slices 2 mm thick.
  12. In a saucepan with one liter of boiling water, add 350 grams of sugar, bring to a boil and completely dissolve the sugar.
  13. Put prepared apples in syrup, bring to a boil
  14. Put in a colander. Let's cool down.
  15. We take the cake out of the oven, check the readiness with a wooden stick, sticking it into the edge. Let's cool down a bit. If desired, grease the edge of the cake with jam, diluted in half with water, and sprinkle with almond petals.
  16. We form roses from the cooled apple slices. To do this, twist one plate with a tube. Then we wrap several plates around the central one.
  17. We also form the outer petals from apple slices.
  18. We make holes in the upper part of the cake with a knife and stick prepared roses into them.
  19. Continue until the entire surface of the cake is covered with roses.
  20. We send the "Bouquet of Roses" cake to the oven, preheated to 180 degrees, for 10 minutes.
  21. Remove the finished apple cake with frangipane from the oven, let cool, transfer to a dish and serve.
