A recipe for a Polish biscuit cake, the dough for which is made with the addition of spinach. Cake "Forest Moss" always surprises guests with its bright appearance, then conquers with taste and insane tenderness.

Ingredients

Directions

  1. Puree spinach with an immersion blender, adding oil.
  2. (I use fresh spinach, but you can use frozen, only the biscuit will not be as bright and green.)
  3. Beat sugar and vanilla sugar with eggs at room temperature.
  4. Gradually add the spinach mixture and stir.
  5. Add flour, starch and baking powder. We knead the dough. Pour the dough into a mold (I have d = 24 cm) and bake a biscuit for about 50 minutes at a temperature of 170 degrees.
  6. For cream, beat cold cream with sugar and vanilla sugar. Add cottage cheese and stir.
  7. Cut off 1/3 of the biscuit with a thread.
  8. We do impregnation. Add sugar and lemon juice to hot water, stir until sugar dissolves. We soak the cake. We place the cake in a detachable ring, spread the cream, level it.
  9. From above we crumble the remaining cake (I take only the green part, without the crust). We put the cake in the refrigerator overnight so that it is well soaked.
  10. We decorate the Forest Moss cake on top with pomegranate seeds or any small red berries.
