Cake "Mikado" is a very popular recipe in modern Armenia.

  1. We prepare products. Butter should be at room temperature. We take it out of the refrigerator in advance.
  2. In the process of baking cakes, we will also need a silicone mat or parchment paper.
  3. Combine butter and sugar and beat for 1-2 minutes.
  4. Add eggs, sour cream and soda.
  5. Beat for 2 more minutes.
  6. We sift the flour.
  7. Gradually add the sifted flour. First knead the dough with a whisk, then with your hands.
  8. The dough should be very soft, not sticky.
  9. Put the dough in a bag or wrap it with cling film. We send it to the refrigerator for 30 minutes.
  10. We take out the dough and divide it into 12 parts, form koloboks from them.
  11. Turn on the oven to preheat to 190 degrees.
  12. On a silicone mat or on parchment, roll each ball of dough into a thin layer with a diameter of 21 cm and a thickness of 2 mm.
  13. We prick the rolled dough with a fork and transfer it on a mat or parchment to a baking sheet and send it to the oven.
  14. Bake the cake for about 5 minutes at 190 degrees. It should brown slightly.
  15. We bake all the cakes and cool them. If your cakes are uneven at the edges, you can trim them with a knife.
  16. For cream, combine sour cream with boiled condensed milk.
  17. Whisk the cream for 1 minute. It should not be very thick, but also not drain from the cake.
  18. Lubricate the cakes with cream, laying on top of each other.
  19. We leave the cake for 3 hours at room temperature so that the cakes are soaked.
  20. Usually the Mikado cake is simply sprinkled with grated chocolate, but I wanted to make it more festive, so I covered the cake with icing.
  21. To prepare the glaze, break the chocolate into pieces. Put in a bowl, add butter.
  22. Melt the chocolate and butter in the microwave (in pulses of a few seconds) or over low heat. Stir the frosting until smooth.
  23. Drizzle the cake with chocolate icing. And decorate as you wish. I decorated with currant berries and marshmallows.
  24. We send the cake to the refrigerator for several hours or overnight so that it is well soaked.
  25. Cake "Mikado" is traditionally cut into diamonds.
