Cake "Mink Mole" - one of the classic cakes. This cake looks original and really resembles a mole's mink, a kind of earthen mound from which an earthen animal is about to appear. :) The cake itself is very tasty, it consists of a chocolate biscuit, curd cream filling, and bananas.

Ingredients

  1. Divide the eggs into whites and yolks. Beat the yolks with a mixer for 30 seconds, then, gradually pouring in boiling water, beat the yolk mixture until fluffy foam for about 30 seconds. Pour sugar into the resulting yolk foam.
  2. Beat the mixture with the sugar until thick but still fluffy. In another bowl, beat egg whites to stiff peaks. Add half of the beaten egg whites to the yolk mixture.
  3. Gently fold in the egg whites. Add the remaining egg whites and fold in gently as well.
  4. In another bowl, combine flour, baking powder and cocoa, mix.
  5. Sift the dry ingredients mixture in 2 batches into the bowl of egg and sugar mixture.
  6. Knead the biscuit dough in a circular motion with a spatula from the bottom up.
  7. Transfer the dough to a baking dish, on the bottom of which lay parchment for baking. I used a springform pan with a diameter of 17 cm.
  8. You need to bake a chocolate biscuit for a cake in an oven preheated to 180 degrees for about 35 minutes. Cool the finished biscuit completely.
  9. Now that the biscuit has cooled down, start preparing the cream filling for the Mink Mole cake. Pour gelatin with cold water and leave for 5 minutes.
  10. Whip heavy cream with powdered sugar until stiff peaks.
  11. Transfer the fat soft cottage cheese to the bowl of a food processor, add a couple of tablespoons of whipped cream to it.
  12. Grind cottage cheese with cream until smooth.
  13. Dissolve the swollen gelatin in the microwave or in a water bath, mix and make sure that there are no lumps left. Add a tablespoon of whipped cream to the gelatin mixture, mix.
  14. Pour the curd mass into a bowl with whipped cream.
  15. Pour cream with gelatin here.
  16. And add chocolate chips (chocolate grated on a coarse grater).
  17. Stir cream cheese until smooth.
  18. Cut off the top of the biscuit and remove the crumb with your hand so that you get a "box".
  19. Place banana slices on the bottom of this biscuit "box".
  20. Then lay out the whole curd-butter cream.
  21. Grind the crumb of chocolate biscuit into crumbs, put it on the cream with a mound and gently press it with your palms from all sides so that the crumbs hold.
  22. Place the cake in the refrigerator overnight or for 6 hours. If desired, before serving, the cake can be additionally decorated with cocoa powder, chocolate chips, and confectionery sprinkles.
  23. Now the mink mole cake is ready to serve. Enjoy your meal!
