No matter how many delicious pastries you cook, the Spartak cake will still remain the most delicious and favorite dessert. Unrealistically delicious chocolate honey cake with butter-custard, so tender that you can eat the cake with your lips.

  1. First you need to sift through a sieve half a serving of flour.
  2. Sift flour with cocoa.
  3. Then mix well.
  4. In a small saucepan, beat eggs with sugar. Add milk, natural honey and softened butter there.
  5. Mix these ingredients well and put on medium heat. Stirring constantly, bring to a hot state.
  6. Once the sugar and butter are dissolved, add baking soda and stir quickly. The mass will begin to foam and increase greatly in volume. We keep the saucepan with the contents on a small fire for about 2-3 more minutes, stirring constantly. After that, remove from heat and let cool for 3-4 minutes.
  7. Then gradually add the mixture to the flour mixed with cocoa. Stir first with a spoon as the mixture will be hot.
  8. Put the warm dough on a floured table, gradually add the rest of the flour and knead with your hands an elastic and soft dough. You can add more flour if needed, but don't add too much flour when kneading. The mass of the dough will be slightly similar to plasticine, the dough should be soft, elastic and slightly sticky.
  9. Roll the dough into a bundle and cut into 8-9 equal parts. Cover with cling film so that the dough does not harden and does not dry out. Put a plate with dough on a saucepan with warm water, then it will be easy to work with it, otherwise it will be almost impossible to roll it out.
  10. Roll out each piece of dough into a circle on a floured countertop or directly on parchment paper.
  11. Place a plate or mold of the desired diameter (22-24 cm) on top of the dough and cut to shape. Leftover dough scraps can be used to decorate the sides of the cake.
  12. Prick the rolled dough with a fork and bake the cake in an oven preheated to 180 degrees for 5-7 minutes.
  13. Bake all other chocolate honey cake layers in this way. After baking, let the cakes cool completely.
  14. Prepare custard for cake, with pudding. In a saucepan, combine a bag of pudding (can be replaced with the same amount of starch) with sugar and vanilla sugar. Add eggs and beat with a whisk until smooth. Add a little warm, but not hot milk and stir the mass well with a whisk until smooth.
  15. Put the saucepan with the contents on a small fire, continuously stir the mass with a whisk, especially at the bottom of the saucepan, to avoid the formation of lumps. As soon as the custard thickens and begins to boil, turn off the heat and remove from the stove.
  16. Pour the custard into a clean bowl, cover with cling film so that the film lies directly on the surface of the cream. In this form, leave the cream to cool to room temperature!
  17. Beat soft butter with a mixer until fluffy light mass, it will take about 5-6 minutes. Without stopping beating, little by little, about a tablespoon, add the custard cooled to room temperature and beat until smooth.
  18. Prepare chocolate icing for the cake. In a saucepan, add sugar, sifted cocoa, pour in milk and mix well. Put on a slow fire and cook until thickened. After the mass boils, stirring, keep the icing on the fire for another 1-2 minutes.
  19. Then remove from the heat and add the butter to the still hot fondant, stir until the butter is completely dissolved. Then let the chocolate icing cool down a bit.
  20. Assembling the cake "Spartacus".
  21. Grease a cake dish with cream. Put the first cake, grease with the prepared cream, cover with the second cake and collect the whole chocolate-honey cake with butter-custard.
  22. Put the top cake on top and pour warm chocolate icing, gently spread over the cake. If desired, the cake can be decorated with chopped crumbs from scraps of cakes.
  23. And you can leave it as it is, or give the cake more beauty by decorating with fruits, berries or an ornament from the remaining chocolate icing.
  24. Leave the Spartak chocolate cake for 3-4 hours at room temperature so that the cakes have time to soak in the cream well. Then place in the refrigerator overnight, then the cut of the cake will be neat.
