Cake with citrus flavor

The cake is prepared with the addition of lemon and lime. Cream cheese frosting also contains citrus zest and juice.

  1. Turn on the oven to preheat to 180 degrees.
  2. Line 2 round springform pans with a diameter of 23 cm with parchment paper and grease with vegetable oil.
  3. Pour sugar into a large bowl and put softened butter, beat with a mixer at medium speed until a homogeneous mass is formed. Gradually add eggs, citrus zest and lemon juice, mix well.
  4. Mix flour with baking powder, soda and salt.
  5. Gradually, alternately add flour and buttermilk (sour milk) to the butter mixture, starting and ending with flour. Pour the batter into the prepared pans, smooth the surface. Lightly tap the molds on the edge of the table to release air bubbles from the dough.
  6. Place the molds in a preheated oven, bake the cakes for about 30 minutes (until a clean wooden stick when pierced).
  7. Remove the molds from the oven, let the cakes cool for 10 minutes, and then release them from the molds. Carefully remove parchment. Let cool completely on a wire rack.
  8. Prepare frosting. In a bowl, combine the citrus zest, lime juice and cream cheese, beat with a mixer at medium speed for 1 minute. Continue beating at low speed, gradually adding the powdered sugar. Beat until smooth, but do not overdo it. Cover the icing and place in the refrigerator for 30 minutes.
  9. Put one cake on a serving dish, grease with half the glaze, cover with the second cake and brush the top and sides of the cake with the remaining glaze. Place the cake in the refrigerator for 1 hour. You can decorate the cake with lemon and/or lime slices.
