Cheesecake with strawberries

One morning I wanted something fresh and light, with fresh strawberries. And that's what I came up with - a recipe for cheesecake with strawberries, or curd-strawberry jelly cake.

  1. To prepare the biscuit, beat eggs with sugar and vanilla sugar.
  2. Add flour with baking powder, beat thoroughly and bake in a detachable form. I covered it on top with foil for 20 minutes and baked for a total of 30 minutes.
  3. Remove the biscuit, let cool and cut into 2-3 cakes. Put the bottom cake in a detachable form and pour over strawberry juice.
  4. To prepare the curd layer of the cake, soak the gelatin in 1 cup of cold water until it swells.
  5. Beat curds with cream, sugar and vanilla sugar until a homogeneous mass is formed.
  6. Heat gelatin until dissolved (do not boil), remove from heat and let cool.
  7. Then add gelatin slowly into the curd mass, beat thoroughly.
  8. Immediately start pouring the first cake with the curd mass.
  9. Lay strawberry halves on this layer.
  10. Then cover with the next cake. Fill the top cake with the remaining curd mass (thin layer 5 mm).
  11. Let chill in the refrigerator for 30 minutes.
  12. While the biscuit-curd jelly cake is solidifying, prepare the remaining strawberries - cut them beautifully for laying with the top layer.
  13. For the top layer of jelly, soak the gelatin in strawberry juice and add sugar. Heat everything to a boil (the color will change - it will become burgundy, like strawberry jam). Jelly to cool.
  14. Take the cake out of the fridge, put the strawberries on top and slowly (with a tablespoon) evenly pour the jelly over the strawberries.
  15. Let it harden (at least an hour) and decorate the cottage cheese-strawberry jelly cake with chocolate drops.
