Chicken salad with pickled onions and potatoes

A hearty and delicious salad of chicken fillets, potatoes and pickled onions can be made even more delicious by using grainy mustard as a dressing.

  1. Boil the chicken fillet in boiling salted water for 20 minutes. Salt the water, let the chicken fillet cool. Wash the potatoes very well and boil them in their skins until tender, in boiling water. We check the readiness of the potatoes by piercing it with a fork. Drain the water from the potatoes, let cool slightly.
  2. Cut the purple onion into half rings. Add wine vinegar, a pinch of salt and a pinch of sugar. Stir and leave the onion to marinate for 10-15 minutes.
  3. Cut the slightly cooled potatoes into cubes, without peeling. Fry the potatoes until golden brown in vegetable oil for 10-12 minutes.
  4. We disassemble the chicken fillet into fibers.
  5. Cut the bell pepper into half rings.
  6. Chop fresh parsley finely.
  7. Put all the ingredients of the chicken, pickled onion and potato salad in a bowl.
  8. Season the salad with mustard and mix well all the ingredients of the salad with the dressing.
  9. Salad with chicken, pickled onions and potatoes is ready.
