This cake consists of a fluffy chocolate sponge cut into two parts, which are layered with whipped cream and cherries.

  1. It is difficult to find fresh cherries out of season, so frozen berries were used. After defrosting, the juice was separated with a colander, and the berries in a separate container were filled with coffee liqueur. During the night they were perfectly saturated with alcohol. You can use any alcoholic beverage of your choice.
  2. Let's get started. We sift the flour. Pour cocoa into it (it is also desirable to sift it to avoid lumps in the dough), baking powder (you can always replace it with soda, but you need to extinguish it in vinegar).
  3. Let's mix. It's a dry mixture.
  4. Break the eggs into a separate bowl, add sugar and butter there.
  5. The oil should be very soft, so put it in a warm place beforehand. Let's beat with a mixer. This must be done for at least four minutes at high speed. It's a liquid mixture.
  6. Combine both mixtures. The dough is quite liquid, that is, the structure resembles sour cream.
  7. Put the dough into a mold. It is useful to shift the bottom of the mold with special food paper - this will greatly simplify the procedure for extracting the finished biscuit in the future.
  8. The temperature regime in the oven is maintained to the required level (180⁰С). Let's put our future chocolate biscuit in it. It bakes for 1 hour. The time is quite approximate and it is worth controlling it, because the ovens are different and the error, in any case, must be taken into account.
  9. Cool the finished biscuit. After 2 hours, when it has completely cooled down, cut it along the side into two parts with a sharp knife. You should get two identical disks.
  10. Cream must be used special for whipping, that is, they must be fatty (from 30%). Whip chilled cream. This is done at the lowest speed setting of the mixer. At the end of the whipping process, when the cream has thickened, add powdered sugar. Buttercream is ready.
  11. In a spiral, starting from the center, carefully lay out the cream using a pastry bag.
  12. Distribute the cherries evenly.
  13. Cover with the second part of the biscuit. Fill the resulting cake with icing. It is very quick and easy to prepare. Chocolate is melted together with butter (equal proportions are taken). This is done on low heat. The cake filled with icing is decorated according to your desire. Peanuts were used here.
  14. A couple of hours in the fridge and you're done.
