Baked potatoes stuffed with chicken and pepper can be served on a festive table or for lunch or dinner. Very tasty, healthy, unusual and beautiful.

Ingredients

  1. Preheat the oven to 180-200 degrees. Pierce the potatoes with a fork, grease with vegetable oil. Bake for 45-50 minutes, until soft.
  2. Finely chop the onion, fry in vegetable with the addition of 2 tbsp. l. butter. Add finely grated garlic, fry for a couple of minutes.
  3. Add finely chopped chicken breast and finely chopped red bell pepper. Fry everything until the breast is tender. Salt and pepper.
  4. Cut the potatoes in half, without removing the skin, and remove the core from the halves with a spoon.
  5. Salt the potato pulp, knead with a fork. Mix with chicken.
  6. (The amount of mashed potatoes can be slightly reduced to make the filling brighter and the boats more flavorful. You can also add finely chopped parsley to the filling.)
  7. Put the filling in the "boats".
  8. Potatoes stuffed with chicken, sprinkle with cheese on top. We bake the stuffed potatoes for another 10-15 minutes at 180 degrees.
  9. Chicken stuffed potatoes are ready. Bon Appetit!
