Zucotto (Italian: Zuccotto) is a Florentine dome-shaped dessert. Dessert is made from sponge cake, stuffed with ricotta, cottage cheese, etc. In this recipe, the most delicate curd cream with marshmallows is ideally combined with cherries and chocolate biscuits. Try it - this delicacy will win you over from the first bite.

  1. We prepare products.
  2. In addition to the products in the cooking process, we need cling film and parchment paper.
  3. Separate egg yolks from whites.
  4. In the egg whites put 2 tbsp. spoons of sugar and beat in a stable foam.
  5. Sift flour, starch and cocoa powder. We mix.
  6. We shake the yolks.
  7. Turn on the oven to heat up to 180 degrees.
  8. Gently fold the beaten egg whites into the yolks.
  9. In portions, we introduce the flour mixture, gently mixing the dough with a spatula.
  10. Two baking pans (I use a round one with a diameter of 18 cm and a rectangular one with a size of 18x25 cm) or one large form are covered with parchment paper. Grease the sides of the molds with butter.
  11. We evenly spread the dough into molds and send it to the oven for 10-15 minutes at 180 degrees.
  12. Let the finished biscuit cakes cool completely.
  13. In a saucepan, combine cherries and 2 tbsp. spoons of sugar.
  14. Put the saucepan on heat and bring to a boil. Cook for 2-3 minutes. Then let cool completely.
  15. We throw the cherry on a sieve so that the juice drains into the bowl - we will also need it.
  16. We combine cottage cheese, sour cream and the remaining sugar. Grind the mass with an immersion blender until creamy.
  17. Marshmallow cut into small pieces
  18. Put the marshmallow into the curd mass and mix. We send it to the refrigerator for 30 minutes.
  19. We are preparing the form in which we will collect the zukotto. I use a bowl with a diameter of 12 cm.
  20. From a smaller cake, cut out a round base for dessert according to the diameter of the selected shape.
  21. From the remaining rectangular cake, we make a domed base for zukotto. Cutting from the center to the edge on one side, cut out a small triangle.
  22. We try on the cake, putting it in a bowl - it should become end-to-end.
  23. We cut off the excess edges of the cake.
  24. Spread half of the curd mass on the biscuit base.
  25. Lay out a layer of cherries.
  26. Then we put another curd layer and a layer of cherries.
  27. We cover with a "lid" of biscuit.
  28. Drizzle with 1-2 tablespoons of cherry syrup.
  29. Cover with cling film and refrigerate for 3 hours.
  30. We turn the finished dessert on a flat plate, remove the bowl and sprinkle with powdered sugar.
