Devil's Food Cake

Devil's food cake is a popular American chocolate cake. It is, in a sense, the opposite of the Angel Food light cake.

Ingredients

  1. Mix cocoa with hot coffee, then add sour cream, mix well and leave to cool.
  2. Whisk butter at room temperature. Without stopping to beat, add sugar, vegetable oil, eggs one at a time.
  3. Add parts of the cooled cocoa and flour mixed with soda, salt and vanilla sugar. We mix.
  4. The resulting batter should be divided into two even parts. We bake two identical cakes for 25-30 minutes at a temperature of 180 degrees.
  5. (The shape, ideally, should be 20 cm. The cake will then be higher, and the cakes will be juicier.)
  6. Check the readiness of the cakes with a wooden stick, do not overbake them, then they will be dry. We take out the cakes from the mold.
  7. (The cakes are very delicate, they must be handled carefully so as not to break.)
  8. For the cream in a water bath, melt the bitter chocolate.
  9. (Chocolate should be unsweetened, dark dark chocolate 72% is fine.)
  10. Beat room temperature butter a little, then add the sifted icing sugar and vanilla. Beat with powdered sugar for 5-6 minutes.
  11. Add the cooled melted chocolate (if it is barely warm, the cream will flow). We beat.
  12. We also cool the chocolate cakes, preferably an hour or two. We apply a little less than half of the chocolate cream on the first cake. Cover with a second layer.
  13. We cover the entire chocolate cake with the remaining cream.
  14. We decorate the chocolate cake "Devil's Food" with grated or chopped chocolate chips.
