  5. Pour in a little sour cream and simmer for a couple of minutes

  7. Squid meat needs to be soaked for a long time. To do this, dilute a teaspoon of soda in a liter of water and leave fillets in it (can be frozen) for several hours, or overnight.
  8. Then cook in the same water (or fresh with a new portion of soda) for 2-3 minutes. Be careful - there will be a lot of foam right away. You will smell an unpleasant ammoniacal smell - everything is correct, it should be so. This is what we digest.
  9. After that, the squid is air-cooled (I do this in a colander).
  10. Now you can cut it into strips and, season with salt and pepper, fry with onions.
  11. When the meat (or fish? Who knows?) Is fried, add half a glass of sour cream. You do not need to pour it into a frying pan, it should fit into the dish and not create excess liquid. A couple of minutes under the lid - and the giant squid can be served either alone or with a side dish.
