  1. It is advisable to collect the snails 2-3 days before cooking and do not feed them all this time. So, let's start preparing the salad:
  2. Put a saucepan of water on the fire, add salt and bring to a boil.
  3. While the water is boiling, wash the snails thoroughly. The dead must be removed.
  4. Place the snails in boiling water and cook for 40 minutes.
  5. Using tweezers, remove the snails from the shells, separate the fillet (thickest part, leg) from the curls (viscera).
  6. Peel the onion, rinse, cut into half rings.
  7. Heat a skillet with olive oil and sauté the onions for 5 minutes (until tender).
  8. Add fillet and fry everything together for 2-3 minutes, salt and pepper. Wait for the contents of the pan to cool down.
  9. Cut the radish into thin semicircles, combine with fillets and onions.
  10. Wash the greens (parsley, green onions), dry with a paper towel, chop and also send to the salad.
  11. Season the dish with soy sauce and wine vinegar, stir and start tasting.
