Halibut, apple, onion and bell pepper skewers

Such halibut fish skewers can be cooked both on an open fire and on a home grill. Fish, vegetables and apples are an excellent culinary trio.

  1. In a large bowl, whisk together the wine (apple juice), olive oil, lime juice, onion, salt, thyme, and ground black pepper. Pour half of the marinade into a large plastic bag, put the fish in it, fasten the bag and shake well. Pour the rest of the marinade into another resealable plastic bag, put the red onion, apple and bell pepper in it. Seal the bag and shake well. Place two bags in the refrigerator for 4-6 hours, turning occasionally.
  2. Lubricate the grill grate with vegetable oil, and turn on the grill itself to preheat to medium temperature. Remove fish and vegetables from the bags. Remove marinade from fish and pour from vegetables into a bowl.
  3. On 8 metal or wooden (soaked) skewers, string fish, apples, onions and peppers in turn. Put the skewers on the grill and fry the halibut skewers under a closed lid for about 2-3 minutes on each side, brushing twice with marinade.
