Salted caviar can be served on the table as an independent snack, or you can cook sandwiches, salads with it, fill tartlets with it. Such snacks will decorate not only an ordinary family dinner, but will be in place even at a festive feast.

  1. In general, salting any caviar is quite simple. The same applies to pollock roe, although it is much smaller than, for example, salmon (red). I'll even say more - it's even easier to salt pollock caviar! The first steps for preparing this fish delicacy depends on whether the caviar is frozen or not. In the first case, let it defrost completely at room temperature. And in the second, we immediately go to salting.
  2. By the way, caviar can be stored in the refrigerator for a short time if salting is planned at a later time. In this case, it must be transferred to a glass or ceramic container, tightened with cling film or tightly closed with a lid. But it is worth remembering that caviar is still a perishable product, so it is better not to tighten it too much with cooking.
  3. Next, you need to free the caviar from the "bags", shells. This can be done simply by carefully removing the films or speeding up the process by passing the caviar through a meat grinder. Another way to beat the caviar with a fork is in a deep bowl. With the latter method, the films will be wrapped around the fork.
  4. Next, add fine salt and granulated sugar to the caviar, placed in a container of a suitable size, mix everything thoroughly so that the salt and sugar are evenly distributed in the caviar. We leave the caviar to stand for 15 minutes, you can cover the container with a lid.
  5. When the specified time has passed, pour olive oil and a little lemon juice into the caviar, mix everything well again. Let the caviar stand for another 5 minutes and you can serve it to the table! If the serving is planned later, just put the caviar in a glass jar and close the lid. We put it in the refrigerator. You can store such caviar for several days.
  6. By the way, salted caviar can be frozen and taken out when needed. For example, before the holiday, to prepare a delicious salad with fishy notes or a gourmet snack.
