Jelly cottage cheese and milk cake with strawberries

Cake made from cottage cheese and milk with strawberries is an excellent summer dessert that will not only please the sweet tooth with its amazing taste, but also delight the eye with a spectacular appearance! Thanks to gelatin, the cake is stable and easily cut into even pieces, but the texture is more like a dense cream than classic jelly. Strawberries harmonize pleasantly with the curd-milk base and give the dessert freshness and bright aroma.

  1. Prepare the necessary ingredients.
  2. Sort the strawberries, cut off the tails. Rinse the berries under cold water and pat dry on a kitchen towel.
  3. Pour instant gelatin into a bowl or bowl and fill with cold water (3 tablespoons). Stir.
  4. Leave gelatin for 5 minutes to swell.
  5. Then melt the gelatin in the microwave in several passes, without letting the mixture boil. Leave the melted gelatin to cool.
  6. Cut a piece of strawberries (120 g) in half lengthwise.
  7. Line the bottom of a springform pan with parchment paper. Install the rim.
  8. Arrange the strawberries along the perimeter, cut to the side.
  9. Put cottage cheese into the bowl of a blender or food processor, pour in milk, add sugar and vanillin.
  10. Punch the ingredients until you get a homogeneous curd-milk mixture.
  11. Pour the resulting mixture into a bowl.
  12. Pour the cooled gelatin into the curd-milk mixture and mix thoroughly.
  13. Cut 250 g strawberries into small pieces.
  14. Transfer the chopped strawberries to the curd-milk base.
  15. Stir gently so as not to damage the strawberry pieces.
  16. Pour the mass into the prepared mold.
  17. Tighten the form with cling film and put the cottage cheese and milk cake in the refrigerator until completely solidified. My cake has been in the fridge for 5 hours.
  18. Carefully remove the foil and rim from the finished cake.
  19. Transfer the cake to a plate and garnish with the remaining strawberries (100 g).
  20. Cottage cheese and milk cake with strawberries is ready to serve.
