Cakes without baking are very popular with many of us. Let's make a pita cake with cherries and cream of sour cream, condensed milk and cocoa. The cake is prepared very simply from the most affordable and inexpensive ingredients and is perfect not only for every day, but also for the festive table. The cream is sweet, thanks to cocoa it has a chocolate flavor and is in perfect harmony with sour cherries. Lavash sheets are well soaked and are moist and tender.

  1. Rinse the cherries well under running cold water. Cut off the tails and sort through the berries. Using a special device, remove the bones. You can take an ordinary safety pin and, with the side where the curl is, get the stone from the cherry. Leave a few cherries to decorate the cake.
  2. Throw the peeled berries in a colander and leave for a while to drain all the juice.
  3. Meanwhile, prepare the cream. In a deep bowl, send sour cream and condensed milk. I have store-bought sour cream, medium density. Stir with a hand whisk or mixer until smooth.
  4. Pour in 20 g of cocoa powder.
  5. Mix well again until smooth.
  6. I have one large rectangular lavash. I cut out 8 circles with a diameter of 17.3 cm from it.
  7. For molding I will use a split ring without a bottom.
  8. On a flat plate in which you will serve the cake to the table, place the ring. I lined the side of the ring with an acetate film from the inside. (You can take a baking dish with a bottom and line it with cling film.)
  9. Grease the bottom and side of the mold with cream.
  10. Put a circle of pita bread on the bottom.
  11. Put some cherries on top.
  12. Cover with a second layer of pita bread. Press down a little with your hands. Add a dollop of cream and smooth with a spoon.
  13. Spread some cherries over the cream.
  14. Lay out the pita bread again. Flatten and press down a bit. I do it with a potato masher.
  15. Lubricate the pita bread with cream, lay out the cherry.
  16. Alternate pita bread, cream and cherry until all the ingredients run out. Lubricate the top pita bread with the remaining cream. Cover with cling film and refrigerate for 6-8 hours.
  17. Take the cake mold out of the refrigerator. Carefully remove the ring. Top the cake with the remaining cocoa powder (through a strainer) and garnish with a cherry.
