Mashed potato soup with garlic, tomato and pepper

Hearty thick mashed potato soup. The recipe is simple and requires very few ingredients - potatoes, tomatoes, eggs, butter and spices.

  1. Peel, cut, wash the potatoes.
  2. Fill with water, add 0.5 teaspoon of salt.
  3. Boil the potatoes in salted water until tender (20 minutes).
  4. Mash the boiled tubers with a crush or rub them through a sieve.
  5. Beat the eggs.
  6. Add raw eggs to the puree.
  7. After mixing well, gradually dilute the potatoes with a decoction from under the potatoes.
  8. Scald the tomatoes with boiling water, peel them.
  9. Chop finely.
  10. Melt 50 g butter in a skillet over medium heat. Put the tomatoes in a frying pan, stew for 10 minutes in butter (maybe in vegetable) oil (50 g).
  11. Squeeze out the garlic. Stir.
  12. Finely chop the greens.
  13. After that, put the pan on the stove, let it boil. Add the tomatoes, chopped herbs, oil (50 g), black pepper and, covered with a lid, bring the mashed potato soup to a boil. Then turn off and let stand for a few minutes.
  14. Serve mashed potato soup with sour cream.
