A no-bake mousse cake with chocolate and coffee. The base is shortbread cookies with butter. The curd-cream layer hardens due to gelatin. Instant coffee gives a subtle coffee shade, and chocolate - a pronounced taste.

  1. Cream is suitable for fat content from 30%.
  2. Dark chocolate can be replaced with milk chocolate.
  3. We use fat cottage cheese.
  4. Butter should be softened. Let's get it out of the fridge.
  5. Let's start by preparing the foundation. We break the cookies with our hands, and then chop them as much as possible with a hammer.
  6. Add well-softened butter to the cookies.
  7. Knead the sticky base for the cake.
  8. To form the cake, I use a split ring without a bottom. You can use a detachable cake pan with a bottom. Since there is no bottom, I wrap the ring with foil. The diameter of the ring is 16 cm. Put the mass of cookies and butter into a mold, tamp it down and put it in the refrigerator.
  9. In the meantime, pour coffee with boiling water (50 ml), cool and add gelatin. Put on a steam bath and heat until the gelatin dissolves. Cool the coffee-gelatin mass.
  10. Grind cottage cheese with a blender.
  11. Beat cream with powdered sugar with a mixer until smooth.
  12. Melt the chocolate in a steam bath. Cool down.
  13. It turned out two masses that cool down - gelatinous and chocolate. It is necessary that both masses cool down, but have not yet begun to thicken.
  14. Add chocolate to cream.
  15. Then add cottage cheese and coffee-gelatin mass, mix with a mixer until smooth.
  16. Immediately, before the mass begins to thicken, put it on top of the cookie layer in a mold. Put in the refrigerator for 12 hours.
  17. Carefully remove the finished cake from the mold.
  18. Sprinkle cocoa powder on top. Creamy curd mousse cake with chocolate and coffee is ready.
  19. With a sharp knife, cut the dessert into portions and serve.
  20. Enjoy your meal!
