Pancake cake with cherries and sour cream

  1. Pancakes for this cake need thin. I made pancakes with yogurt (the recipe for pancakes can be found at the link in the list of products). You can make pancakes according to your favorite recipe or use the suggested recipe, which is just designed for 15 pancakes with a diameter of 22 cm.
  2. Sour cream for pancake cake should be prepared from thick thick sour cream. If the sour cream is liquid or you are not sure that the cream will be stable after whipping, it is better to weigh the sour cream. To do this, put the sour cream in several layers of gauze and hang it overnight to drain the whey. I threw out the sour cream.
  3. Cherries for the cake can be used fresh, frozen or canned. I had frozen pitted cherries. In any case, the pits from the cherries must be removed. Catch a life hack: it is very convenient to remove the pits from cherries with a cocktail straw!
  4. So, the pancakes are ready, the pits from the cherries have been removed, you can start preparing the cream for the pancake cake. To do this, transfer the weighed (thick) sour cream into a bowl, add powdered sugar.
  5. Beat sour cream with powdered sugar with a mixer (a couple of minutes). Sour cream is ready!
  6. Put a pancake on a plate.
  7. Arrange the cherries on one side of the pancake.
  8. And roll the pancake with cherries into a tube. Fold the rest of the cherry pancakes in the same way.
  9. Put 5 pancake rolls with cherries on a plate.
  10. Brush the first layer of pancakes with cherries with some of the sour cream.
  11. Place 4 more rolls on top, brush with cream.
  12. Then lay out 3 rolls and cream again.
  13. Now lay out 2 more rolls and cream.
  14. Lay the last pancake roll on top.
  15. Brush the pancake cake with sour cream on top and sides with the remaining sour cream.
  16. Put the pancake cake with cherries and sour cream in the refrigerator for at least 2 hours.
  17. Before serving, decorate the pancake cake with melted chocolate.
