A hearty and simple side dish of the most affordable products - mashed pearl barley and potatoes, with the addition of fried onions. An original and budget dish, which is very easy to prepare. The puree turns out to be very delicate and interesting in taste, and fried onions perfectly complement such an unusual dish, making it even tastier and more nutritious.

  1. Pre-soak the pearl barley in water for 12 hours, during this time the pearl barley will swell, which will improve its taste and significantly reduce the cooking time.
  2. Peel the potatoes, wash, cut into large pieces and put in a saucepan.
  3. Drain the swollen barley, rinse the cereals well with clean water and send them to the pot with the potatoes.
  4. Pour about 300-400 ml of clean water into a saucepan, set to maximum heat and bring to a boil.
  5. Then reduce heat to low, salt and stir. Cover and cook the barley and potatoes for about 30 minutes, until soft and soaked in water. If the water remains, and the potatoes and cereals are already completely soft, remove the lid, increase the heat to medium and, stirring, cook until the excess liquid evaporates.
  6. Mash boiled potatoes and pearl barley in mashed potatoes using a pusher or hand blender.
  7. Peel the onion and cut into small cubes.
  8. Heat vegetable oil in a skillet over medium heat. Add the onion and, stirring occasionally, fry for about 3-4 minutes, until golden brown. Season with salt, pepper and stir.
  9. Arrange the prepared pearl barley and potato puree on plates, top with fried onions and serve.
