This recipe makes potato bread fragrant, airy and incredibly tasty. And what a crispy and appetizing crust he has! I baked bread from potato yeast dough for the first time, and everything worked out, so I can safely recommend this recipe.

Ingredients

Directions

  1. In the cooking process, we need parchment paper.
  2. Peel and dice the potatoes.
  3. Fill the potatoes with water and boil until tender (20 minutes).
  4. Drain 230 ml of broth from the finished potatoes, we will need it when kneading the dough. Pound potatoes in mashed potatoes. Let the potato broth and mashed potatoes cool until warm (38-40 degrees).
  5. Sift flour into a bowl.
  6. Pour in yeast and mix.
  7. Pour in sugar, salt and nutmeg. We mix.
  8. Put mashed potatoes in the flour mixture, pour in the broth and olive oil.
  9. Knead the dough for 15-20 minutes, periodically dusting the table with flour (if necessary). We form a ball from the dough.
  10. Cover the dough with a towel and leave in a warm place for 30-40 minutes.
  11. During this time, the dough will double in volume.
  12. Knead the dough again and form a bun.
  13. We make a crosswise incision on top. Leave the dough under a towel in a warm place for another 20 minutes.
  14. Put a heat-resistant bowl down the oven and turn on the oven to heat up to 200 degrees, setting the convection mode (blowing).
  15. Grease the bread with water and sprinkle with a mixture of pumpkin seeds, half a sunflower and sesame seeds.
  16. Pour cold water into a heat-resistant form (in the oven). We send bread from potato yeast dough to the oven for 15 minutes. At this time, do not open the oven door so as not to release the steam formed there.
  17. Then we open the oven door, release steam and lower the temperature to 175 degrees, turn off the convection mode. Bake potato bread until tender (20-25 minutes).
  18. Let the finished bread cool slightly.
  19. The potato bread is ready. Bon Appetit!
