Potato salad with mayonnaise and mustard

A delicious and easy-to-prepare salad of potatoes, eggs, cucumbers, with mayonnaise and mustard will completely replace the usual Olivier salad. And although there is no meat in the potato salad, it turns out to be very satisfying.

  1. Boil the potatoes in their skins, in salted water, until tender. We check the readiness of the potatoes by piercing it with a knife. If the knife slides easily into the flesh of the potato, it's done.
  2. Cook chicken eggs hard-boiled (8 minutes after boiling), cool. We clean the eggs and cut into cubes.
  3. Peel the cooled potatoes and cut into large cubes.
  4. Cut the pickled cucumbers into cubes of the same size as the eggs.
  5. Cut the purple onion into quarters.
  6. Finely chop the dill and parsley.
  7. Put chopped potatoes, cucumbers, eggs and onions in a bowl.
  8. Add mayonnaise to the salad. Add hot mustard, dill and parsley. From the spices add ground black pepper, ground paprika and salt to taste. Mix all the ingredients of the salad from potatoes, eggs, cucumbers and onions.
  9. Serve the finished potato salad with mayonnaise and mustard.
