Potatoes with cheese and pickled onions

Semi-hard cheeses are good for baking. So in this recipe, baked potatoes are prepared with raclette cheese, and served with pickled onions.

  1. Put the onion in a glass bowl, pour boiling water over it so that the water completely covers it. Leave the onion in the water until it is completely cooled.
  2. Meanwhile, combine sugar, vinegar, salt and dill in a small saucepan. Put on low heat and cook, stirring occasionally, until the sugar is completely dissolved. Remove the pan from the stove and let cool at room temperature.
  3. Drain the water from the onion, squeeze lightly and transfer it back to the bowl. Pour the cooled vinegar mixture and leave on it for at least 1 hour, or better overnight.
  4. Boil the potatoes in the peel until soft. Peel the finished potatoes and place in an ovenproof dish. Switch on the oven with grill function for preheating. Sprinkle potatoes with salt and top with cheese.
  5. Place in a grill pan with cheese and potatoes and bake until the cheese is melted. Remove the onion from the marinade, squeeze it out.
  6. Serve hot baked potatoes with pickled onions.
