Quick homemade roll for tea. Juicy, tender condensed milk roll with cottage cheese cream and berry jam - a very tasty combination, especially cottage cheese with blueberries or strawberries.

  1. Beat the eggs until a thick, stable foam - they should brighten and increase in volume.
  2. Continuing to beat the eggs with a mixer at high speed, gradually add condensed milk, 2 tbsp. spoons.
  3. Add a pinch of salt and vanilla (for example, a few drops of vanilla extract). Gradually add the sifted flour with baking powder.
  4. Beat first at low speed, then increase the speed of the mixer.
  5. The dough for the roll is ready, it looks like a biscuit, but a little heavier because of the condensed milk.
  6. Grease a rectangular mold (baking tray) for baking the cake (I used a 27x37 cm mold) with butter and cover with parchment.
  7. Pour the dough into a mold (baking tray) and evenly distribute it over the surface (the height of the dough should be no higher than 1 cm), you can shake the baking sheet a little.
  8. The oven must be preheated to 300 degrees (to the maximum temperature).
  9. We send the dough to a well-heated oven for 7-10 minutes.
  10. Beat sour cream at medium speed for 2 minutes. Then add powdered sugar and continue beating.
  11. Separately, in a blender, we interrupt the cottage cheese.
  12. Mix cottage cheese with sour cream and beat the curd cream for 2-3 minutes.
  13. We take out the cake for the roll from the oven, turn it over, remove the parchment. Cover the cake with a damp towel and leave for 10 minutes to cool completely.
  14. You can cut the cake in half and make two rolls, but I cut off the top of the cake and use it for crumbs to sprinkle the finished roll with curd cream.
  15. Lubricate the lower part of the cake with blueberries grated with sugar (it will also be delicious with strawberries, you can use other jam or jam).
  16. We spread the curd mass on top of the blueberries, leaving a little to grease the top of the roll. We distribute the curd cream, but not to the very edges of the cake.
  17. We shift the cake on a towel and wrap it with a roll. If the roll starts to break a little, it's okay.
  18. Lubricate the top and sides of the roll with curd cream. We send the roll to the refrigerator for a while, while we make crumbs.
  19. Grind the rest of the cake with a blender into crumbs. Grate chocolate (optional).
  20. Roll of condensed milk, with cottage cheese and sour cream and blueberries, sprinkle with crumbs and grated chocolate. We send it to the refrigerator for several hours.
