Salmon steak baked in the oven, combined with ratatouille, and all this with spinach sauce ... Sounds truly divine!

Ingredients

Directions

  1. Preparation should begin with the preparation of ratatouille: in the vegetable mixture add peeled and seeds chopped tomatoes (tomato concasse - the language of professional chefs). Season the mixture with salt and pepper to taste.
  2. Once the ratatouille is ready, place the vegetables on pre-salted and peppered salmon steaks. Then send the fish to the oven and bake until done.
  3. While the salmon is cooking in the oven, it's time to start making spinach sauce. To do this, simmer finely chopped onions for 10 minutes in a well-heated pan with a little butter. Add spinach leaves to the mass, sauté, pepper and salt. Then pour the cream into the pan and evaporate the sauce for 3-4 minutes. If the consistency is too thick, add a little vegetable broth.
  4. Pour the prepared sauce into a blender and beat until smooth. Then grind the sauce through a sieve and it is ready.
  5. Drizzle salmon steaks with ratatouille with a small amount of spinach sauce before serving.
