  1. Prepare all the food you need. Take large shrimps - king or langoustines. Do not use small, peeled shrimp of Chinese origin. I have wheat flour, but if you want to give your dish an original taste, you can use, for example, rice or buckwheat flour. The egg is large, preferably homemade, at least CO. Such eggs differ not only in size, but also usually have an orange color, which will give the dish a beautiful color
  2. Mix flour with salt. To make the batter more airy, I recommend sifting the flour. At this stage, you can add some dry spices or seasonings to the flour: dried garlic will add spice to the dish, ground paprika - a beautiful color, dried dill and Provencal herbs - their piquant taste and aroma. Stir.
  3. Wash the egg well. This must be done, because a huge number of bacteria accumulate on the eggshell. It is best to wash the eggs with moderately hot water using a special brush. Whisk the egg into a separate bowl and beat lightly with a fork.
  4. If you have cooked frozen shrimp (they are usually pink in color), then simply scald them with boiling water so that they are completely defrosted. If raw shrimps (these are usually gray in color), then boil them in boiling salted water for about 5-7 minutes.
  5. Remove shrimp heads, if present, and brush them.
  6. Dip each shrimp separately into the beaten egg first.
  7. Then roll well in the flour mixture. If you want a denser batter, then repeat the egg-flour again. Shake off the remaining flour a little.
  8. Heat the oil in a skillet with high sides. It can be absolutely anything: from sunflower to olive, but since we are going to fry in oil, it must be refined - only such types of oil can be fried. Place the breaded shrimp a short distance from each other so that they are evenly fried on all sides. Fry for 3-4 minutes on each side.
  9. Place the fried shrimp on a paper towel to remove excess oil.
  10. Tasty both hot and cold. Bon Appetit!
