A very banana cake for banana lovers. It has an amazing-tasting banana cream under a light “cap” of whipped proteins. Banana cake is amazing.

  1. With a mixer, knead the dough from flour, salt, sugar, eggs and diced butter.
  2. Wrap the ball of dough in cling film and put it in the fridge for 30 minutes.
  3. After half an hour, roll out the dough and put it in a greased split form with a diameter of 22 cm. Make sides 3 cm high. Put baking paper on top of the dough and sprinkle bean grains or peas on it so that the cake does not swell during baking. I have a jar of peas for this purpose.
  4. Bake for 25 minutes in an oven preheated to 200C.
  5. Wash the lemon and wipe it dry. Grate the zest. Squeeze juice from lemon. Peel bananas. Cut 1.5-2 bananas into slices and sprinkle with lemon juice so as not to darken. Mash the remaining bananas with a fork or cut into cubes. Separate the yolks from the whites.
  6. For the cream, mix the yolks with 100 g of sugar, and then beat with a mixer with bananas, lemon zest, lemon juice and sour cream. The cream is quite liquid.
  7. We take out the form from the oven, take out the paper with peas. Place banana slices on the bottom of the cake and top with cream. Reduce oven temperature to 180°C and bake for 40 minutes.
  8. Beat egg whites with sugar until stiff. And spread on the finished cream. Smooth out with a wooden spatula. Put in the oven for 15 minutes to set the foam.
  9. Let the finished cake cool slightly, then carefully circle the side with a thin knife.
  10. We put the cooled banana cake on a dish, we can decorate with bananas if desired. When cooling, golden dew appears on the proteins - a natural decoration.
