  2. Put 3 eggs in a mixer bowl and beat at high speed until a white fluffy dense foam is obtained.
  3. Without stopping whipping, pour in a thin stream of 150 milliliters of vegetable oil.
  4. There, without stopping whipping, add 300 grams of granulated sugar.
  5. In a separate bowl, mix 160 grams of flour, 1 teaspoon of baking powder, 1 teaspoon of cinnamon.
  6. Sift into the egg-butter mixture. Add 1 teaspoon of salt and mix gently in one direction until a homogeneous dough is obtained.
  7. Add grated carrots to the dough, 60 grams of roasted coarsely chopped walnuts, mix.
  8. We spread the dough on a baking sheet measuring 30x40 centimeters, lined with baking paper, greased with oil. Bake in a preheated oven at 180 degrees for about 20 minutes. Readiness is checked with a wooden stick.
  9. Remove the finished cake from the oven and let cool. We spread the cooled cake on a wooden board, easily remove the paper and divide into three equal parts.
  10. Let's prepare the cream. Pour 200 milliliters of cream with a fat content of at least 30% into a bowl, add 3 tablespoons of sugar, 2 teaspoons of vanilla sugar.
  11. Beat with a mixer until a dense lush cream is obtained.
  12. The resulting butter cream is mixed in three doses with 200 grams of mascarpone.
  13. We collect the cake, alternately smearing the cakes with cream.
  14. We coat the whole cake with cream, cover the sides with toasted chopped nuts.
  15. We decorate the top of the cake according to your taste and imagination. We draw with melted chocolate, using a paper cornet, a bunny with a carrot.
