  1. Tiradito - a dish of "Peruvian-Japanese" cuisine, the so-called. nikkei kitchen. The name of the dish, in Spanish tiradito, means thin slices of raw fish in a spicy sauce. The basis of the tiradito is fresh fish (in this case, we do not have a classic fish tiradito, but from an abalone) of any kind, a sharp knife and juicy lime.
  2. So, let's begin.
  3. Let's prepare the abalone:
  4. the ears must be removed from the shells, cut, leaving only meat for cooking;
  5. rinse the meat, dry well and chop it into slices with a thin sharp knife;
  6. the slices must be dried with a napkin and slightly frozen.
  7. We will prepare the marinade, for which it is necessary:
  8. put lime juice in a ceramic dish; finely chop the garlic and add to the lime juice;
  9. stir and salt the marinade with sea salt.
  10. Marinate the frozen abalone slices for 25 minutes in a cool place.
  11. In the meantime, prepare the sauce for serving:
  12. combine beans, chopped cilantro, parsley and celery in a blender bowl;
  13. add hot dried peppers, chopped pods of hot green and red peppers, while leaving a couple of pepper rings for decoration;
  14. pour in olive oil;
  15. grind the sauce with a blender until smooth.
  16. Serve marinated abalone slices with hot sauce on a shell or a plate, garnished with rings of green and red pepper.
