Tiramisu without Mascarpone

Homemade Tiramisu - We replaced the Mascarpone cheese with whipped cream.

Ingredients

Directions

  1. Beat 4 yolks with 200 g of sugar until foamy.
  2. Beat 4 egg whites with the juice of half a lemon (or a pinch of salt) until soft peaks form.
  3. Sift 120 g of flour and mix gently with the yolks (add 1 teaspoon each).
  4. Gradually add whipped proteins (1 tbsp each).
  5. Line a baking sheet with parchment paper and use a pastry bag to squeeze the dough into sticks.
  6. Dust with powdered sugar and bake. When browned, take it out. Allow the pan to cool before another run or use another pan.
  7. Cream for Tiramisu:
  8. Dissolve a tablespoon of gelatin in 50-100 g of cold milk (15 minutes).
  9. Grind 4 yolks with 75-100 g of sugar.
  10. Combine the yolks with heated gelatin (in a water bath).
  11. Beat 2 proteins with vanilla sugar and mix into the yolk mass.
  12. Whip 500 ml of vegetable cream and add a tablespoon of egg mass while whisking.
  13. Preparation of Tiramisu with cream:
  14. Line tiramisu molds with cling film.
  15. Brew natural coffee.
  16. Lay out the cream 2 cm thick.
  17. Then, at the same distance from each other, lay out biscuit sticks soaked in coffee.
  18. Cream and sticks again.
  19. Then cover with a biscuit and leave the Tiramisu overnight.
  20. After that, remove the Tiramisu dessert from the mold, remove the film.
  21. Decorate the Tiramisu with whipped cream and cocoa.
