  1. Pour the coffee into a deep plate and cool.
  2. Separate the yolks from the proteins. Beat the yolks with the sugar and vanilla sugar until light creamy. At this stage, if desired, you can add amaretto. Add mascarpone to the yolk mass and mix thoroughly.
  3. Beat the proteins to the peaks and very carefully introduce them into the mass of mascarpone, mix gently, from top to bottom so that the proteins do not settle.
  4. Prepare utensils for tiramisu. One by one dip the cookies in the coffee and line the bottom. Cover the top with a layer of cheese mass. Layout a layer of coffee-soaked cookies again and cover with cheese. Cookies can go longer, depending on the size of the dish.
  5. Smooth the top, shake through a cocoa sieve, and refrigerate for at least 3 hours.
