Yogurt cake with cherries

A colorful yoghurt cake with cherries is the most delicious sweet dish on hot summer days. Cake with yogurt and cherry jelly will not only give you pleasure, but also refresh you in the heat.

  1. For the biscuit, crack the eggs into the bowl of a food processor, add salt and sugar. Beat everything for 3-5 minutes at maximum speed.
  2. Add the sifted wheat flour to the egg mass.
  3. (If in doubt about the quality of the eggs, add 0.5 teaspoons of baking powder, but even without this ingredient, the biscuit turns out to be fluffy and airy.)
  4. Pour the dough into the mold and bake the biscuit in the oven at 180 degrees for about 25-30 minutes or in a slow cooker, turning on the "Baking" mode, for about 50 minutes.
  5. Then remove the biscuit, cool for 20-25 minutes, cut horizontally in half and use the bottom cake.
  6. Pour 200 g of sweet cherries with sugar in a saucepan on the stove for about 5-7 minutes, leaving 100 g of sweet cherries. Pour the resulting juice into yogurt and mix. (If you like sweeter desserts, add a little more granulated sugar to your liking.)
  7. Dissolve gelatin in 50 ml of boiling water or hot water, stir it properly for 3 minutes, until completely dissolved, pour into yogurt and mix.
  8. Line the cake pan with cling film, dip the bottom biscuit cake into it. Pour in half of the yogurt mass and lay out the remaining cherries, leaving a couple of berries for decoration. Place the mold in the freezer for 15 minutes to set the layer, but no more, otherwise the rest of the yogurt mass will thicken. Remove and top with remaining yogurt.
  9. Spread the boiled cherries over the yogurt mass and lightly press it into the bottom layer.
  10. Whip the cream and spread it on top of the cake, make neat patterns and place the dessert cake in the refrigerator for 2 hours or in the freezer for 30 minutes.
  11. After the specified time, remove the yoghurt cake with cherries and decorate it to your liking.
  12. Cut the yogurt cake into portions and serve.
