Bear kidneys stewed in French

Kidneys are prepared very tasty according to a French recipe. The process is simple, but requires certain ingredients. It is not recommended to substitute or eliminate any products in order not to degrade the final taste of the gourmet dish.

  1. Cut the kidneys lengthwise, soak in milk for 3-4 hours.
  2. Remove the ducts from the soaked meat, then cut across into slices 1-1.5 cm thick.
  3. Chop the onion and coat in flour with the strips of meat.
  4. Fry in a preheated skillet for 5-7 minutes, then add wine and simmer for about 15 minutes over low heat.
  5. While the wine is steaming, finely chop the tomatoes and, after 15 minutes of stewing in the wine, add to the kidneys along with the broth. Season with salt and pepper. Then simmer for another 5-10 minutes.
  6. If you are using freeze-dried broth, then you will need 7-8 grams of powder in 300 ml of water. Any kind of broth will do - chicken, beef, or even mushroom. Note that the broth powder itself is salty.
  7. Garnish the finished dish with fresh herbs and serve with rice, buckwheat or French fries.
