Kurze with Beef

Beef in the filling can be replaced with veal or lamb.

  1. For the dough, sift the flour with a slide. Make a well, add 250 ml of salted water and an egg. Knead into a soft, homogeneous dough. Leave, covered with a towel, for 30 minutes.
  2. For the filling, combine the minced meat, tomatoes, finely chopped cilantro and onion.
  3. Divide the dough into several parts. Roll each into a thin layer. Cut out the circles with a glass or a mold with a diameter of 7 cm. Place the filling on each and pinch the edges with a beautiful pigtail.
  4. Boil the kurze in salted boiling water for 10 minutes, they should float up. Place them on a serving dish and add small pieces of ghee. Serve hot with garlic sour cream or tomato sauce.
