Nengmyeon Noodles

Naengmyeon is a traditional North Korean dish, cold buckwheat noodles served with a little beef broth, slices of boiled beef, and a boiled egg. Separately, there are sauces: mustard and slightly sweet red pepper sauce.

Ingredients

Directions

  1. Prepare soy broth: dissolve salt, sugar, vinegar and soy sauce in water. Add dill and pepper. Put in the refrigerator.
  2. Prepare beef broth. Transfer the beef to a saucepan, cover with cold water so that the water covers the meat, and bring to a boil. Reduce heat immediately and cook for 5 minutes, collecting foam. Drain, rinse the meat under running water.
  3. Place the meat in a saucepan, add fresh cold water and bring to a boil again and remove the foam.
  4. In a dry skillet, fry half the onion and half the carrots, celery.
  5. Place vegetables in a saucepan with meat, add black pepper / bay leaf to taste.
  6. Leave the saucepan over low heat for 2 hours. As soon as the meat begins to move away from the bones, remove from heat.
  7. Strain the broth and let cool. Remove the beef from the bones and save.
  8. Boil the buckwheat noodles as directed on the package.
  9. Cut vegetables, beef and pear into strips.
  10. Combine 2 types of broth and pour into 4 cups. Add noodles, chopped ingredients. Place half of a hard-boiled egg in each. Garnish with chili and chopped green onions.
