  5. Wash the lemon and wipe it dry. Rub the zest on a grater. Squeeze juice from lemon. Peel the bananas. Cut 1.5-2 bananas into slices and sprinkle with lemon juice so as not to darken. Mash the rest of the bananas with a fork or cut into cubes. Separate the yolks from the whites.
  6. For the cream, mix the yolks with 100 g of sugar, and then beat with a mixer with bananas, lemon zest, lemon juice and sour cream. The cream turns out to be quite liquid.
  7. We remove the form from the oven, take out the paper with peas. Put banana slices on the bottom of the cake and pour cream on top. Reduce the temperature in the oven to 180 ° C and bake for 40 minutes.
  8. Beat the whites and sugar until firm. And put it on the finished cream. We level it with a wooden spatula. We put in the oven for 15 minutes so that the foam grasps.
  9. Let the finished cake cool a little, then carefully trace it around the side with a thin knife.
  10. Put the cooled banana cake on a dish, we can decorate with bananas if desired. When the proteins cool down, golden dew appears on the proteins - a natural decoration.
