These interesting dark muffins with an unusually rich sesame taste and aroma will not annoy anyone with an abundance of small grains, since they simply are not here - sesame is ground into a paste for dough.

  1. Before preparing all the ingredients, prepare the sesame paste - you need 50 grams of it. I take a little sesame with a margin, 60 g, because as a result, some of the paste will remain on the walls of the blender bowl.
  2. Dry the sesame seeds in a dry preheated pan, stirring constantly with a spatula, for 2-3 minutes. Since the grains are black, and the degree of readiness is not visible, so in order not to overcook, focus on the sound - when the sesame begins to "click", remove it from the heat.
  3. Pour the sesame seeds into the blender bowl and begin to grind. From time to time you need to open the blender and peel the sesame seeds from the sides of the bowl.
  4. The process of grinding sesame seeds into a paste takes about 10 minutes. Sesame seeds release oil, and as a result, a rather thick homogeneous mass is obtained. The sesame paste is ready.
  5. Preparing the ingredients for the muffins.
  6. The oil should be softened - we take it out of the refrigerator in advance.
  7. We turn on the oven to heat up to 170 degrees.
  8. Combine softened butter, sugar and 50 grams of sesame paste in a bowl and beat with a mixer until smooth.
  9. Add eggs one at a time and beat the sesame mixture after each addition.
  10. Add the flour sifted with baking powder in parts (120 g is an incomplete glass with a capacity of 200 ml). Stir after each addition of flour.
  11. You will get a thick, homogeneous dough.
  12. We spread the dough into molds and sprinkle with white sesame seeds. I have a silicone muffin tablet and I don't need to lubricate it. If you use metal molds, then grease them with oil or use paper capsules.
  13. We send the form to the preheated oven and bake the sesame muffins at 170 degrees for 35-40 minutes. We check the readiness with a toothpick - it should come out of the middle of the cake dry.
  14. The black sesame muffins are ready.
